my Made up Veggie-Barley-Quinoa soup

So, I had never made a homemade, made-from-scratch soup before. But I LOVE LOVE soup in the cold seasons. And now that I eat mostly organic, healthy foods, it's really hard to find good pre-made soups. I LOVE barley and veggie soups so decided to just try my own. It came out SO good. Had a bunch of people on my friends list ask me for the recipe so I thought I'd post it on here: Everything is organic except the leek soup mix that I used, just an FYI.

So I don't really have a formal recipe lol....But I used:

-Tree of Life- Low Sodium Free Range Organic Chicken Broth (whole container) (you could always substitute a veggie stock if preferred)
- Knorr Leek Soup Mix - 1 package
-Nature's Earthly Choice Red Quinoa - a little less than 3/4 cup dry
-Organic barley from whole foods health store- 1 cup
-Scallions - 4 chopped up (top and bulb)
-Baby Bella Mushrooms- chopped 4 medium
-organic Celery hearts - about 3 small stalks chopped
-Full Circle organic carrots- chopped 2 medium
-Trader joe's frozen artichoke hearts - cut up about 4 hearts
-organic Butternut Squash chunks (I bought them pre cut up at Lowe's food) and cut about 5 chunks down to smaller pieces
-iodized sea salt & organic pepper to taste

Basically I simmered the barley and quinoa in the chicken stock & leek soup mix first until they were almost cooked.. then added the carrots and butternutsquash since those are the harder veggies.. let them get about halfway soft, then pretty much dumped everything else in... and simmered until it was done. I didn't time it, I just kept checkin on it and tasting til it was how I wanted it. really easy, really cheap to make and made enough for about 5 or 6 servings! It tasted AMAZING!

    I know the weather is insane! But it's been chilly the last couple of days here in Western NC. perfect soup weather :) I'm almost done with this first batch, ready to make more! lol
