A little something I kind of pulled out of a hat the other day after Googling vartious protein muffin recipes:
Vanilla Protein Blueberry Oat Muffins
* 2 scoops of Optimum Nutrition Gold Standard 100% Whey Protein Powder, Vanilla Ice Cream flavor
* 1 tsp Baking Powder
* 2 egg whites
* 1.5 peeled apples (I used Gala)
* 1/2 cup of Skim Milk (I use Lactaid)
* 1/2 cup of frozen blueberries
* 1 cup of Quaker Quick 1 Minute Oats
Using food processor, grind up half of the oats into a flour-like powder. Combine with all the other dry ingredients, including the rest of the unground oats. Then, separately from the dry ingredients, grind up the apples, and mix/grind in the rest of the wet ingredients to the apples. Combine wet and dry ingredients. Mix in blueberries. Bake at 350-degres for about 20 minutes. This made 9 muffins (each has 85 calories, 8 grams protein, 12 grams carbs, 1 gram fat and 1 gram fiber).

Thanks!
I will replace blueberries with raspberries, use 1 apple rather than 1.5 (the other half will just go brown or get added to my daily carbs so might as well) and will use a 6-muffin jumbo tin and they will only be 2 WW points each, woo!
