Baked Cheese Polenta with Sausage and Tomato Sauce

I made this for dinner last night and it was SO good! Pair this with a green salad, or some steamed veggies, for a complete meal. You could also add roasted peppers and caramelized onions to the sauce for even more veggie goodness. I went with the salad.
Baked Cheese Polenta with Polish Sausage and Tomato Sauce - Serves 4 276 cals
1 1/2 cups water
1/4 teaspoon Italian Seasoning (I used Penzy's Pizza blend)
1/2 cup (70 grams) Bob's Red Mill Corn Polenta or Grits
1 wedge Garlic and Herb Laughing Cow Cheese
1 wedge Sun-dried Tomato Laughing Cow Cheese
3/4 cup no sugar added tomato sauce (I used my homemade recipe, so your calories may vary here)
4 ounces polish sausage, thinly sliced (I used Kiolbassa brand Polska sausage - 130 cals/2oz. serving)
4 ounces fresh mozzarella, thinly sliced (I used Whole Foods brand)
In a small pot bring the water to a rolling boil over high heat. Reduce the heat to medium and add the Italian seasoning then slowly whisk in the polenta and cook until very thick, about 5 minutes. Turn off the heat and whisk in the cheese wedges.
Heat the oven to 400 F and spray a small baking dish (mine was 7"x5") with non-stick cooking spray. Spread the polenta evenly in the prepared dish. Spread the tomato sauce over the polenta, then arrange the sausage and cheese over the top.
Bake for 35 to 40 minutes, or until the cheese is brown and the dish is bubbling all over. Remove from the oven and cool for 5 minutes before serving.

This sounds divine! Totally gonna make it! I never knew what polenta was..they make it on Top Chef all the time! So, I guess it's like grits! Now, I DO know grits being from the South!0
