what to do with gorgonzola?

i am now the proud owner of 4lbs of gorgonzola cheese thanks to my inlaws. this is just one of 3 other cheeses i am now in possession of but the one that has me stumped the most on what to do with it. other than the obvious (make gorzonzola sauce but that's SO FATTENING!) anyone have suggestions/recipes? feel free to share with me.

Gorgonzola is sweet heaven!
When I ate bread, pasta, rice, potatoes etc... type of carbs, it went on just about all of them.
I don't eat like that anymore, now I put it on salads, vegetables and steak. Love it0 -

When in doubt I throw things in salads and/or omelettes.

If it didn't come already crumbled, crumble and freeze it! Lasts a long time and you can take out of the freezer as needed for recipes.0

I second crumbling in salad, especially green salad which contains some fruit like pear or grapes. If you can spare the calories, add a couple of toasted walnuts or pecans to the salad too. Spread on toast. Melt a little on a steak or porkchop. Have reconstituted dried figs for desert with a little gorgonzola on the side. Poach the dried figs in a combination of water and red wine until plump and boil down the cooking liquid to make a syrupy sauce. The alcohol evaporates so you don't need to count full calories for the wine used in cooking.0

That's what I'd do. Or put it on steak (if you eat red meat). Sooo tasty.
I also like to make a blue cheese cheeseball, but that's not exactly healthy.0 -

Melt that on potatoes.
Melt it on ANYTHING. Oh god the endless possibilities, it's the perfect cheese with a snobby wine.0 -
Grate some on your soups. Great with onion soup, or minestrone. Also good on a pita pizza. Grate some on some fresh popped popcorn. On top of anything with marinara. On chicken, on salad, on sauteed mushrooms. Oh and I saw a comment that said to crumble and freeze, but FYI, keep some in a block, and use it to fresh grate over whatever. You don't have to thaw it first, just grate it when frozen. So good!0

buy/make some ground b/l s/l chicken breast for burgers. Tuck some of the cheese in the middle. You could add spinach too. Chopped mushrooms. You can make the whole thing into a meatloaf instead of burgers, too. We do this w/ feta.

OK, really...I crumble it in salads and use a light dressing. A little goes a long way.
Crumbles on a steak are good too.

WOW! thank you everyone for these great ideas! salad was my first thought but there's SO MUCH of it! i'd be eating salads for 6 months with it. now i'm actually looking forward to using it.
i also have 8 YES 8 pounds of provolone - my inlaws LOVE going to a shop called restaurant depot. they're old school italian.
one weekend visit from the inlaws and my fridge is chuck full of cheese.0 -
