Chicken Salad?

Looking for a low fat, but tasty version.

    Replace the mayo with plain greek yogurt in your favorite recipe!!

    I use shredded chicken (from a rotisserie chicken is a nice shortcut), diced green apples, halved purple grapes, diced red onion, slivered almonds, 1/2 cup Fage 0% greek yogurt and 1/4 cup low fat Hellman's mayo, and curry powder, so it is a curried chicken salad. Very good and healthy!

    Use tzatziki sauce instead of mayo....lots of flavor...minimal cals.

    I use the following:

    Raw spinach
    Sunflower seeds
    Coarse Oat Bran sprinkled in
    Chicken pieces (sometimes tuna/whatever meat I have and if no meat, egg)
    Any veg in the fridge such as courgettes, peppers.
    Kidneys beans/mixed beans/chick peas depending on what is there.
    1 teaspoon of ceaser salad dressing.
    a splash of vinegar.
    Sprinkle of mozzarella
    If I am lucky enough to have some -beansprouts. They are good :)




    All in all, 178 cals for a lunch. If you are particularly hungry, up the meat quanitity, or maybe a slice of bread :) I could eat it all day everyday :D ha ha
  • I like a basic Salad, the one I made for dinner the other nite was something like:

    Salad
    1 large truss tomato chopped into pieces
    1 continental cucumber chopped into pieces
    2 cups of fresh baby spinach leaves
    1/4 cup diced spring onions
    4 serves of Meat of your choosing (I used Tuna)

    Dressing
    2 cloves of fresh diced garlic
    1 teaspoon basil paste (or diced basil if you have it)
    1 teaspoon of fresh lemon juice
    1 teaspoon of cold pressed olive oil

    Mix dressing ingredients together, pour over Salad and mix through till evenly coated
    Will serve 4 people.
    Alternatively divide everything by 4 to feed one.
    I leave out the meat till I'm plating up to make sure I get a full portion of protein.

  • I make mine with all the below ingredients:

    Chicken
    Apples
    Grapes
    Cashews
    Miracle Whip (I use very little)

    It tastes very good! I am not sure exactly on the fat content though. :ohwell:

    I make a warm chicken salad.

    Marinate chopped up raw chicken breast in about 2 Tblspns balsamic vinegar, 1 Tblspn olive oil and crushed garlic for 30 mins, I usually put in a small snaplock bag and turn it over a few times. Then pan fry in non stick pan till cooked and service on top of salad made from whatever you choose. I often add strawberries when in season as balsamic vinegar and strawberries go great. I could eat this 5 nights a week!

    shredded poached chicken

    lettuce
    tomato
    onion
    beetroot
    hot pepper
    sriracha

    or instead of sriracha, mexican seasoning and salsa

    Thai Chicken salad:

    1/2 bag of coleslaw mix (or some shredded raw cabbage, red onion and carrots)
    Shredded chicken
    chopped spring onions (Green onions)
    fresh coriander (cilantro)
    Fresh mint
    cucumber ribbons (slice some cucmber using a veg peeler)
    Roasted peanuts, crushed for garnish.

    Dressing:

    1 tbsp thai fish sauce (Nam Pla)
    Juice from 1/2 a lime (about 1 tbsp)
    1 tsp sugar or granulated splenda
    chopped fresh chilli or dried chilli flakes, to taste.
    1-2 tbsp water, to blend.

    I put it on crackers, tortilla or just it it by itself, also works with left over turkey.
