Salad Toppings?

In need of new ideas of things to put on salads. What do you do?

    Lots of green veggies, I usually use spinach instead of lettuce (better nutritional value and I think it has more flavor). I love green onions, cucumber, some tomatoes, and then I try and add some kind of protein like lunch meat and maybe a little cheese. Beyond that, walnuts are tasty as well as I like craisins on mine every now and then. I also like to have spinach salads with a poached egg and just a bit of salt and pepper and I think that is tasty.

    I'm a creature of habit so that's about all I have. :smile:

    I like red beets, dried cranberries, apples or another fruit for sweetness, olives for tartness, banana peppers, black beans/salsa/corn, mixing up salad dressings (soy ginger for Asian themed/chipotle for a Southwestern, et cetera), tuna, almonds or crunched up baked sweet potato slices, quinoa, cottage cheese, a lot of possibilities!
  • An idea I think that I got from Nigella Lawson was to cut up potato into little cubes and roast it in the oven - then it is just like croutons! :-)

    I use feta cheese crumbles, all the colors of peppers, cucumbers, jalapenos, cherry tomatoes and whatever else I can find to add flavor, I use a low fat raspberry vinaigrette dressing.

    I like spinach, mushrooms, feta, olives, beets, all veggies, egg, any cheese, chick peas, apples, berries, pecans, almonds, cod, beef, or chicken I love so much stuff. I change them up all the time. I like cottage cheese with tuna, or I put fruit on it.

    I like feta or goat cheese crumbled, nuts, (almonds, pecans & walnuts are great!), I usually use spinach or arugula instead of lettuce, and it goes really well with fruit... figs, apples, pears, oranges, pretty much any berry.
    Veggie wise, I'm pretty lame, usually just cucumber, but I also like roasted red peppers.
    I almost always make my own vinaigrette, just olive oil, something sweet and something acidic.

    I also love mixing in fresh herbs, like basil, it doesn't add much nutrition wise, but tastes great! :)

    Bacon bits, almond slices, mandarin oranges, pomegranate seeds, diced apples, croutons, cucumbers, carrot slices, cherry tomatoes, and I use raw spinach instead of lettuce.

    Beef...

    thinly sliced onions, corn, black olives, salsa, half-serving of shredded cheese & a dallop of sour cream. (I add store-bought Taco Bell chipotle salad dressing when I need some extra calories.)

    Best damned taco salad I've ever had.

    Salsa and diced avocado is my new favorite over raw kale, raw spinach and bright yellow and orange bell peppers!

    Dried cranberries are nice. I also adore pepitas - shelled, roasted pumpkin seeds.

    ETA: By shelled, I mean the super tasty inner seed has been removed from the outer shell. You can make your own, but they sell them already prepped and ready to go.

    A 4-6 minute boiled egg (depending on size), plunged immediately into cold water, is cool enough to peel but still has a soft yolk, which makes a lovely 'salad dressing'. Egg salad is also great for protein, low in fat, low in calories (60cals for a medium egg) and vegetarian (though obviously not vegan). Egg, lettuce, cucumber, chopped onion, grated carrot and some home-made croutons (wholemeal bread, spray on some fry-light, shove in oven on low) makes a tasty, filling meal. In fact I think I shall have that for dinner.
