Low Carb Taco Salad
I made this last night, and it was so good I have to share.
Ingredients:
One head (bunch) of fresh green leaf lettuce (not Iceburg)
Taco flavored shredded cheese
93% lean ground beef
Regular sour cream (can be low-fat too)
Hot and Spicy Taco seasoning (save sodium / carbs by seasoning on your own)
About 8 small sweet peppers, sliced small (can buy in a bag of 3 servings at Walmart)
Hot salsa
Directions:
Chop your lettuce ( I sliced mine into strips)
Saute beef and add taco seasoning as directed
Sprinkle 1.5 servings of cheese (or less) on lettuce
Layer beef over cheese
Top with 1 serving of sour cream and salsa
Sprinkle peppers on top
The sweet peppers have an awesome contrast to the spicy flavor. I divided the recipe into three servings, and as posted above, it has on 10 carbs! (and most of the carbs came from the taco seasoning!). It has 29 g of fat, 42 g of protein, and overall 489 calories. The downside is it's a big high in sodium, but that is easily remedied (and I'll probably fix that next time I make it).
You could add olives, or tomatoes, though that would add a few more carbs.
