Crockpot Cheesy Chicken Spaghetti

Servings | 12

16 oz. Dry Spaghetti, cooked ( I used Smart Taste Ronzoni)
1 lb. Velveeta Light Cheese
12.5 oz. can Chicken Breast, drained and flaked (I used chicken I had cooked)
10 3/4 oz. can 98% Fat Free Cream of Mushroom Soup, undiluted
10 3/4 oz. can 98% Fat Free Cream of Chicken Soup, undiluted
10 oz. can Diced Tomatoes and Green Chilies (Rotel)
4 oz. can Mushroom Stems and Pieces, drained or fresh mushrooms
1/2 cup Water
1 small Onion, diced
Salt & pepper, to taste

Spray slow cooker with non-stick cooking spray.
Combine all ingredients in slow cooker and stir to mix well.
Cook on LOW for 2-3 hours. Stir again just before serving.

My family loves this recipe.

    Yes, it is so yummy! My family loves it too. I eat 90% vegetarian, but even I cannot resist this delicacy.
    You don't really wanna know how many calories are in a serving LOL it is too scary to calculate! However, the modifications in this version should allow most to enjoy it on a cheat day without guilt, as long as we add a couple of extra reps/sets/miles to the next workout.

    I plugged the recipe into the recipe builder and it is only 182 calories per serving.

    12 servings though... with just me and hubby eating, I cannot figure out how to break that down.

    I am learning to cook for 2.... so I'd have to figure a substitute for the cream soups and I'd use real cheese rather than Velveeta.

    I cook the spaghetti before I add it to the crockpot.
    The serving size is 1 cup.

    I would have to greatly modify this because it doesn't sound very healthy unfortunately (though it sounds ridiculously tasty)..... Not only does it sound not so easy on the calories, but it sounds terribly high in sodium..... You could cut the noodles out, make the cheesy chicken part and put it over spaghetti squash instead.... there's one easy way to cut out some unnecessary carbiness.

    It does sound good!! I'm thinking about doing this, subbing spaghetti squash for the pasta, and using maybe a mix of pepper jack and cheddar cheese instead of the Velveeta.
