    I just made this. Put the egg and banana in a small bowl and used a mixer. I beat it until fluffy, then I added the protein powder. I also added a bit of vanilla. I poured 1/2 into a heated saute pan that I sprayed with cooking spray. The texture is similiar to scrambled eggs that are a little tough. The vanilla gave it a hint of sweetness, and I threw some blueberries on top. It's not bad. I will make it again, but next time, I'll put it in a pie plate and bake it in the oven. I'm thinking that would make it more fluffy, and less tough.

    I think adding the blueberries helped me not notice the strange texture. It may be that I just turned it too much trying to see if it was done.

    After putting the other 1/2 into the pan, I see that turning it as little as possible will help keep it fluffy and I'm betting the second pancake will have a better texture.

    This makes two good sized pancakes. When I make it in the oven, I'll update :happy:

    This recipe is full of win. I used ON Double Chocolate. The mix thinned a bit on the way to work, but it still came out tasty.

    Without a blender: Use a hand mixer if you have one or use a VERY ripe banana and mash it up, whisk egg separately and then combine (whisk the egg well for fluffy texture)

    Without a microwave: Oven would be the closest thing to replicating this

    Might have to try this for a quick & healthy snack!

    Two servings of egg whites does the trick. For me, it's approximately 6 tbsp of Egg Beater egg whites (92g).
