What you can do with

My freezer full of ground chicken
and ground turkey.

8 pakcages, need to start making them ....

Any healthy/good recipies for using this meat ?

    bolognaise but put in heaps of vegetables\
    add some kidney beans, chilli then you have chilli con carne

    basically, anything that you would do with ground beef.

    Use it in chili, cook it and put it on salad, I often add some onions and bread crumbs and spices and cook them into patties and then heat them up for a high protein snack when I need it or heat them up for breakfast,

    Chili for sure. Here is my recipe, but you can substitute either chicken or turkey:

    Emeril Live Recipe:

    2 tablespoons vegetable oil
    2 cups chopped yellow onions
    2 teaspoons salt
    1/2 teaspoon cayenne
    2 pounds beef bottom round, cut into 1/2-inch cubes
    1/2 cup tomato paste
    One 28-ounce can whole tomatoes and their liquid
    2 cups beef broth
    2 tablespoons chopped garlic
    1 tablespoon chili powder
    2 teaspoons ground cumin
    2 teaspoons dried oregano
    1/2 teaspoon red pepper flakes
    1 cup dried white beans, picked over, rinsed, cooked in salted water to cover until tender, drained, and cooled

    In a large, heavy pot, heat the vegetable oil over medium-high heat. Add the onions, season with 1 teaspoon of salt and the cayenne, and cook, stirring, until they are wilted and golden, about 4 minutes. Season the meat with the remaining 1 teaspoon salt and add to the pot. Cook, stirring, until the beef is browned evenly on all sides, about 4 minutes. Add the tomato paste and cook, stirring, for 2 minutes. Add the tomatoes, beef broth, garlic, chili powder, cumin, oregano, red pepper flakes, and beans. Bring to a boil, then reduce the heat to medium-low and simmer, uncovered, stirring occasionally, about 2 hours. Skim off the fat that rises to the surface.

    I do a lot of southwest salads and toss in ground chicken with taco type seasoning for protein: greens, salsa, avocado, ground chicken, etc.

    I agree...I use it for everything.

    Lasagna, stuffed shells, stuffed peppers, empanadas, chilli, baked ziti, burgers, meatloaf, meatballs, tacos, taco dip, shepards pie, potato balls, sloppy joes...the ideas are endless :-)

    One of my favourite recipes for turkey fried rice:

    Ingredients
    - 3/4 cup brown rice
    - 2 tablespoons of canola oil 2
    - 1/2 pound of ground turkey
    - 1 tablespoon of chopped garlic
    - 1 table spoon of chopped ginger
    - 4 scallions, sliced
    - 1 cup of frozen peas
    - 1 cup of snow peas, halved
    - 4 carrots, sliced
    - 2 tablespoons of hoisin sauce
    - 2 tablespoons of rice vinegar

    Directions
    - Cook the rice according to the package directions.
    - Meanwhile, heat the oil in a large skillet over medium-high heat. Add the turkey, garlic, ginger, and half the scallions and cook, breaking up the meat with a spoon, until browned, 3 to 5 minutes.
    - Add the rice, peas, snow peas, carrots, hoisin sauce, and vinegar to the turkey mixture and cook until heated through, 2 to 3 minutes. Top with the remaining scallions.

    Yes I know theres endless possibilites I just didnt know what to put it with for a recipie or how much to measure out for myself for a serving, its for dinner so needed to make a low cal meal of something, portion controlled.

    My whole family loves this; even the little ones and it is so easy.

    Turkey Bean Stew

    1 # ground turkey
    1 onion diced
    1 zucchini diced
    4 pieces of turkey bacon (or more if you want)
    1 15 oz can petite diced tomatoes
    1 can no salt pinto beans
    1 pkg onion soup mix
    1.5 cup water or broth
    Ground pepper and garlic to taste

    Brown turkey remove from pot and set aside. Saute onions, zucchini, and bacon. Add back ground turkey and remaining ingredients. Simmer on low for at least 30 minutes. Adjust seasoning as needed.

    I serve this over steamed brown rice and it is delicious.
