VERY LOW CALORIE SOUP!

I make a BIG pot of this soup and it lasts me all week. I eat it multiple times a day because it helps fill me up and is very low in calories. The batch that I recently made came out to be 33 calories for a 1 cup serving. So if you're really hungry, you can have 3 cups of soup for 100 calories! NOT BAD! Your individual pot of soup may vary depending on the amount and variety of vegetables you use!


You will need

A big soup pot
1 48 oz bottle of Low Sodium V8 vegetable juice
8 cups water
Vegetables of your choice
Herbs & Spices of your choice

Here are the vegetables I used:
1/2 of a large head of Green cabbage
3 cups Carrot slices
8 stalks Celery
9 oz container of Mushrooms
2 Zucchini
1 Red Bell Pepper
1 Yellow Bell Pepper
6-10 Green onions
1 Tomato

Chop up your vegetables and measure out the amounts so you can add up all your calories and divide into servings. My batch came out to be 28 (1 cup) servings.

I used an italian seasoning that I believe was a dry mix of oregano, basil, and thyme. This cooks up to be a BIG batch of soup so I use a lot of seasoning.

Add your V8, water, chopped vegetables, and seasoning to the pot. Bring to a boil and simmer for 2-3 hours. SO EASY, SO GOOD, & SO FILLING!
