Delicious oatmeal raspberry almond muffins :)

I made some delicious muffins yesterday by tweaking an old recipe and I thought I would share it with you all. The calories aren't too bad, and the ingredients are very healthy!
Oatmeal Raspberry Almond Muffins
Makes 12 muffins
1 cup quick cooking oats
1 1/2 cups whole wheat flour
1/2 cup sugar
1/2 cup sliced almonds
1/2 tsp salt
1 tbls baking powder
3/4 cup skim milk
1/4 cup extra virgin olive oil
1/4 cup unsweetened apple sauce
1 egg
1 cup raspberries (fresh or frozen, I used frozen)
1. Preheat oven to 400, grease 12 muffin cups
2. In a large bowl combine oats, flour, sugar, nuts, salt and baking powder
3. Stir in milk, oil, applesauce, and egg just until mixed
4. Fold in berries
5. Sprinkle a few oats over each muffin for garnish
6. Bake 20 mins, let cool before removing from pan
These got rave reviews from my husband's whole family, none of whom are dieting. They taste like bakery quality muffins

Protein: 5g
Sodium: 212mg

Those sound great! I am going to try your recipe. Although, I wonder if one could use Stevia (sugar substitute) rather than sugar, that would reduce the calories by 30 per muffin...thanks for the recipe!0

I'm going to try these this weekend though I have Mixed Summer Berries in the freezer so I'll substitute those. I bake a lot for a weekly campaign meeting so I'm always looking for something new and healthy.
One question though:

I thought the same thing about the baking powder. It was in the original recipe. Yes, I used a whole tablespoon, and they rose prefectly.0 -

The olive oil doesn't give these a weird taste, does it? I never use olive oil in baking recipes because, well, I don't want my baked goods tasting like olives. .0

Nope, you can't even taste it. You could probably omit it and just use double the applesauce. The original recipe called for 1/2 cup vegetable oil, which I never use and don't even have. I didn't want to just go with applesauce because I need the fat in my diet. But no, you can't taste it at all.0 -
Raspberry is my favorite flavor, cant wait till summer and fresh raspberries. Yum
Making these on Saturday , gonna use frozen for now.

Made these this morning. They were great. I used only 1 tsp of baking powder and I substituted coconut oil (melted) for olive oil as well as rapadura for sugar.
Big hit! Keep me on the list for more recipes.
We should start a thread sharing recipes - or, maybe it is already being done!
