I had seen a few different things like this floating around Pinterest, but all of them seemed to be missing something... so I invented my own!
*WARNING* These are not some miraculously low-calorie diet food. They have a significant amount of calories per bite because they are made of whole, nutrient-rich, high protein ingredients and are intended for energy and nutrition. So please do not comment "40 calories per bite?? That's outrageous!" because they are not something that you just sit and chow down on in front of the TV
5 med. bananas
2 tbsp creamy peanut buttter
2 tbsp traditional Greek yogurt (I used Oikos Strawberry because I like strawberry and peanut butter, but any flavor will do)
1 tsp honey
1 tsp ground cinnamon
15 wafers (2.5 servings) of Baker's Dark Dipping Chocolate (I only accounted for 2 servings in the calorie count because a significant amount of chocolate does not actually make it into the recipe because it sticks to the inside of the piping bag.)
3 tbsp sliced, slivered or crushed almonds
toothpicks, wax paper, 2 small piping bags or sandwich bags
Peel the bananas and slice into 1/2 inch sections. Set aside half of the slices, and lay the other half on the wax paper.
In a bowl, mix the peanut butter, yogurt, honey and cinnamon until it becomes a smooth mousse.
Put the mixture into a piping bag or sandwich bag with a small hole cut in the tip. Squeeze a dollop onto each banana slice. Place another banana slice on top of each one.
Melt the chocolate and put it in another bag.
Drizzle/squeeze chocolate over the bananas, making sure the chocolate goes down the sides of each bite, not just on the top.
Sprinkle almonds on the bites before the chocolate cools so that the almonds stick.
Secure each bite with a toothpick and transfer to the container you want to store them in.
Stick in the freezer and grab a few whenever you want a nutritious, filling snack!
Per Bite:
Calories: 40
Carbs: 7
Fat: 2
Protein: 1
Sugar: 4
Other things that could be sprinkled on: granola, coconut, other nuts, etc.
Enjoy!

P.S. Banana sizes will cause variation in number of Bites the recipe yields, but mine came out to 26 Bites.0
