Need ckicken breast ideas

I only buy boneless skinless chicken breasts only thing my family will eat. I have made it so many diffrent ways so I need new ideas.

My favorite way is to make them into crockpot chicken enchiladas.....
4-6 skinless, boneless chicken breasts (I use them frozen)
I can red enchilada sauce
1 8 oz. cream cheese (you can use full-fat, or reduced, but I wouldn't recommend fat-free)
Spray crockpot, and put chicken breasts in the bottom. Pour on the can of enchilada sauce, and lay the brick of cream cheese on top. Cook on low all day.
To make the enchiladas, shred and stir the chicken, sauce, and cream cheese together until the chicken falls apart. Place chicken mixture onto a flour tortilla, and roll up. Place in a 9x13 baking dish, seam side down. You can fit six large tortilla shells in a 9x13 pan. Pour a second can of enchilada sauce over the top, and add shredded cheddar cheese (as much or as little as you like). Bake at 350° until heated through (approximately 30 minutes). Serve with your choice of toppings: more shredded cheese, lettuce, black olives, sour cream, etc.
The leftover chicken can be used for chicken tacos, etc.
PS. The chicken mixture looks kind of gross in the crockpot, but believe me, it tastes DELICIOUS.

Season chicken with taco or fajita seasoning (I usually mix up my own - cumin, chili powder, oregano, etc.), place breasts in casserole, top with salsa & shredded cheese - cheddar, colby, Monterrey Jack, or a mixture. Bake at 350 for 30 minutes, or until chicken is done.
This would also be good with a fruit salsa, or combination of canned fruits, and change the seasoning accordingly.0 -
I had a cookbook called "Church Ladies" years ago, and in it had a recipe called "Honey Bear Chicken" here's the recipe;
Chicken thighs or breasts, or a cut up chicken
1 cup yellow mustard
1 cup honey
mix
now pour over chicken in a glass pan. cook in oven at 350-375 (depending upon your oven) for 30-45 min. SUPER GOOD AND DELISH.0
