Low calorie yet filling foods advice ... help?

So over the past 3 weeks I have gained back almost 3 lbs. (I did log it btw to keep me honest) I can see I need to exercise more so I can eat back some of those calories ... winter is coming and it must be some biological thing that I want to eat more (maybe I am half bear?).

Anyone have some ideas on low calorie foods that are quick to prepare and very filling? I am not much of a cook so easy prep would be great too.

    I love my veggies omelettes. It's usually a bit of olive oil, sometimes some onion, zucchini and/or peppers and/or tomatoes and/or broccoli etc in a pan and stir it with some dried herbs or just salt and pepper. Then I beat up 2 eggs with some salt and pepper and mix in the veggies and maybe some (feta) cheese. Bring it back in the pan and cook slow from both sides = omelettes. Or faster an stir it = veggie crumbled egg ;-)

    Chicken always fills me, and some soup with rice makes me a happy camper.

    Fish fills me too, and man just fresh veggies like bell peppers or anything thats mostly water just fills me up too, plus veggies are low cal.

    Egg substitute with lots of veggies and any kind of lower fat meat...easy to make, yummy and filling.

    For lunch I tend to have a around 500-600 cals usually in a salad and it fills me.... I normally include:

    hard boiled eggs,
    ham,
    cheese
    lettuce
    cucumber
    cherry tomatoes
    chicken

    All filling and healthy foods :) Cheese is high fat obvs, but I'm doing low carb/keto so its a positive for my diet, which is great because I LOVE cheese!!
