Vegetarian Mexican recipies... throw them at me

So I've decided I love kidney beans and mexican food. I've avoided it for so long as I could never juggle the calories enough to fit them in.
I've got a few recipes but they are very 'western' and I'd like to try something else.

I'm not a vego but I'd like to try more meatless meals with pulses and legumes instead. As mexican has lots of awesome and simple flavour I guess this would be the easiest for me.

    Its super easy! I dont necessarily have any recipes from scratch, but mexican goes great with any legumes!

    When I buy the mexican kits from the supermarket I just substitute the meat for a can of 4 bean mix, or lentils/chickpeas/kidney beans/black beans/ whatever you like! And I usually add mushrooms and capsicum to the bean mix as well.
    You fry them up the same way as you would the meat, with the onion and seasoning, and it turns out sooo delicious!!

    Also finely chopped tomato, red onion, capsicum, jalapenos, coriander and lime juice makes the BEST fresh salsa!

    Refried beans in a slow cooker. You don't have to soak the beans overnight this way. As someone who lives on the border, I would tell you to skip the jalapeno. Beans and guacamole are not supposed to be spicy! They are there to help you take the edge off of all the chilies that you put in the main course.

    Speaking of chilies, my favorite vegetarian Mexican dish is the chili relleno, green chili peppers (like they grow in Hatch), stuffed with cheese (asadero), then battered and fried. Sometimes they're served covered in sauce, and sometimes they're just wrapped in a tortilla burrito style, maybe with some beans. Might not be that light on calories, but if you looked around you might find a good recipe. I haven't tried making them myself.

    I just pinned this on Pinterest the other day! I haven't tried it yet, and it does have meat in it, but I had actually planned on just taking the meat out and adding in beans in its place. Looks delish! :)
