    I like to marinate chicken in Lawry's Hawaiian marinade and then grill it. I throw it over some brown rice with pineapple cut up and broccoli on the side. It's a favorite meal in my house.

    I made a great dinner tonight, Turkey parmesan. I grilled up 4 turkey cutlets (pounded out a little), seasoned with Mrs. Dash on my grill pan, stove top. That was yesterday. I put them in a small pyrex dish and stuck them in the oven tonight to warm thru. When we were almost ready for dinner, I put about 1/2 cup of mozzarella cheese on top with 1/2 cup classico tomato and basil sauce, stuck it back in the oven to melt and warm. A baked potatoe and 1 cup of brocoli for me and I was set with 5 oz of the turkey cutlet.

    I also made a huge pot of turkey chili yesterday which is going in the crockpot tomorrow to finish cooking for tomorrow nights dinner.

    I grilled up some chicken yesterday, sliced it up and put 5 oz on a salad for dinner last night.

    The other 4 turkey cutlets will get sliced up later in the week and put into 4 oz (uncooked) elbow macaroni with 1 cup of classico tomato and basil sauce and 2 tbsp of parmesan cheese sprinkled on it.

    I have some tilapia that I will be defrosting. I'll sprinkle with some seasonings and grill up in my cast iron skillet, lay on top of 1/2 cup brown rice and top with some salsa.

    Those are my easy dinners for this week.

    I like to make turkey meatballs and spaghetti. The kids love it!

    1 pkge lean ground turkey (some already come seasoned)
    1/2 c. seasoned bread crumbs
    wheat spaghetti
    Large can of stewed tomatos
    1 clove garlic minced
    1 med onioin chopped
    Italian seasoning to taste

    Take the turkey in a bowl and add the bread crumbs. Roll them into balls about 1 to 1 1/2 in. in diameter. Set them aside. As you finish rolling the last ones. Heat about a Tbsp of etra virgin olive oil in a pan. Add the meatballs making sure they are well cooked, about 5-8 minutes. I like to cover the pan and lower the heat slightly to get them to cook more evenly without having to worry about having burned outsides and raw insides.

    Cook the spaghetti in salted water for about 8-10 minutes or until al dente.

    In a separate pot sautee the onions and garlic in about 1 Tbsp olive oil. Crush the can of tomatos with the liquid. Add the Italian spices along with some salt and pepper to taste.

    some simple go-to dinners i like to make are fritatta, wraps, rice with vegetables and almonds, mini pizzas made on toasted flatbread or whole-wheat english muffins, a big salad with shrimp, and healthy tacos :happy: with low-cal tortillas, ground chicken or turkey or shrimp with lots of veggies and salsa!

    i made this for dinner the other day. it was a household favorite. i called it "taco pizza"

    ingredients:
    1 Flatout brand flatbread
    chopped green leaf lettuce
    chopped onion
    diced tomato
    mild salsa
    ground chicken cooked with taco seasoning
    Other optional ingredients:
    low fat shredded cheese
    low fat sour cream
    guacamole

    Directions: cook up meat and chop vegetables beforehand.Heat up a pan big enough to fit the flatbread in over medium heat. toast the flatbread until stiff and crispy. top flatbread with other ingredients in any order you wish. cut into 8 peices. makes one personal pizza. i found that the salsa was just enough to use as "pizza sauce" and not that much meat was needed. loading the pizza with veggies and salsa made it more low-cal. i left out the sour cream, quac, and cheese and it was just fine.
