Shrimp Squashi
It's like shrimp scampi...but with spaghetti squash instead of pasta...turned out REALLY yummy.
It's also VERY easy to make but a little time-consuming only because of how long squash takes to cook. You can cut out a lot of time by cooking it in the microwave instead.
Ingredients:
* 1 whole spaghetti squash
* 1/2 lb shrimp, peeled and de-veined
* 6 cloves garlic
* 1 tbsp extra virgin olive oil
* Herbs (I used lemon pepper, along with a little basil, parsley, and sprinkles of sea salt and paprika)
* 1 oz cheese (I used a gouda-parmesan mix...but any kind of parmesan or asiago cheese would work)
Instructions:
* Preheat oven to 375 F
* Cut squash in half and discard seeds and the loose stringy center
* Place squash cut-side-down in a baking dish. Put enough water in the dish to cover the bottom.
* Bake squash for 45 minutes or until the meat is soft but not mushy.
* Saute shrimp and garlic in half of the olive oil.
* When squash is done, use a fork to scrape out the meat into the shrimp saute- it will come out stringy.
* Add the rest of the olive oil, as well as the herbs.
* Mix well and cover on low heat. Let sit for about 5 minutes or until squash is to the consistency you like (some like it mushy while others like a slight crunch).
Stats (based on 2 large servings...it can make more servings if you want to serve with salad or soup, etc.):
* Cals- 328
* Fat- 11
* Carbs- 33
* Sodium- 201
* Protein- 32
* Fiber- 6
