What's a good way to prepare it without meat?

I slice mine in half, scoop out the seeds, bake until done then put a little maple syrup and brown sugar in the middle hollow.... sooo good and reminds me of my childhood. A comfort food for me.0

Acorn Squash Rings, there are a lot of variations of the recipe floating around. I have made them with stuffed with quinoa, spinach and garlic and they were great.

We bake ours, too, but prefer it with just salt, pepper, and a little butter.
You can stuff them but use beans or quinoa or something like that instead of the meat part of the filling.0 -
