I have a Sweet Potato mountain!.......

Sweet Potatoes are on offer in my supermarket and being one who loves a bargain I got some.....3.75kg to be exact and there is only me to eat them! :laugh:

So....I need lots of yummy ways to cook them and things to have with them please.

    I enjoy them baked with some light garlic and herb Philadelphia and side salad or
    Roasted sweet potato wedges are also nice.

    Make low fat sweet potato fries!

    Peel sweet potatoes and cut into French fries.

    Lightly toss with olive oil - about 1 Tbsp.

    Sprinkle with smoked paprika, garlic powder, pepper, etc. Rub the fries until they are coated with oil and seasoning.

    Spread out on a parchment paper lined cookie sheet.

    Roast in oven @ 400 for 20 - 30 minutes depending on how crispy you like them.

    I peel them, slice them up like fried potatoes, put a little olive oil on them and cook them in the oven on a cookie sheet for about 30 minutes. Taste pretty good!

    This^^^ but I also sprinkle them with either cinnamon, or Cajun spice, depending upon what else I am having.:love:

    Just had a baked one for my dinner.....it was really dry and claggy.....even when i mixed some greel yogurt in it......not impressed! :grumble:
