Dulce de Leche brownies - 140 cals!

So I found this recipe for Dulce de Leche brownies and immediately fell in love. It was my boss' birthday yesterday, so I made a big batch and took them into work. People simply could not get enough of them! I myself ate three yesterday, a big deal for me since normally I limit myself to one sweet or none at all. They're just so good! And the best part is, I substituted a few things in the recipe to make them lower-calorie. Of course, 140 cals per square still isn't "low", but it's certainly better than the original, and pretty good for such delicious brownies!

My recipe:
8 Tbsp light butter
8 oz semi-sweet mini chocolate chips
1/4 cup unsweetened cocoa powder
3 large eggs
1/4 tsp vanilla extract
1/2 cup Truvia Baking Blend (or other sugar substitute... original amt was 1 cup real sugar)
1 cup flour
1 cup Dulce de Leche (I used a Nestle Dulce de Leche syrup because I couldn't find the real stuff in my store)

Preheat the oven to 350 degrees.

Line a 9x13 inch baking dish with foil and spray with cooking spray.

In a saucepan melt butter, add the semi-sweet chocolate chips, stirring constantly over very low heat until the chocolate is melted. Remove from heat and whisk in the cocoa powder until smooth. Add in eggs one at a time, then stir in the Truvia, vanilla, then the flour.

Pour half of the batter into baking dish. It will be a little thin, but just spread it out along the bottom. Spoon one-third of the Dulce de Leche, over the brownie batter evenly in dollops, then drag a knife or spatula through and swirl. Pour the remaining brownie batter over, then spoon the remaining Dulce de Leche in dollops over the top of the brownie batter. Use a knife or spatula to swirl the Dulce de Leche creating a marbled effect.

Bake for about 30 minutes. When finished, a knife inserted into the center of the brownies should come out clean. The caramel may bubble up over the top a bit, so when you take them out of the oven just spread it around with a knife again. Allow to cool completely. Cut into 24 brownies.

Nutritional info per brownie: Calories: 140 | Carbs: 19g | Fat: 6g | Protein: 3g

Another substitute I just thought of to save some calories: you could replace a couple of the eggs with applesauce. I like the eggs though for protein.

Enjoy!!
