Chilean sea bass
Options
I bought some to try but the way I normally ccok fish, in a fry pan with a marinade and cooking spray, didn't work for me. I found it quite oily/greasy any suggestions as I still have one more piece to cook? I typically buy tilapia or pollock but wanted to branch out and try something new. Also what kind of fish do you lIke? I also like tuna steak.

Looks like Chilean sea bass (really Patagonian Toothfish until the marketing departments came up with the sea bass thing) is on the watch list for having too much mercury. :-(

Wonderful baked with favorite spices and a slice of lemon- use a broiler pan so fat can drain off.0

Wonderful baked with favorite spices and a slice of lemon- use a broiler pan so fat can drain off.
I did bake it today with a light breadcrumb coating, much better and the breading got nice and crispy do to the oiliness of the fish. Almost gave it a fried fish quality without all the extra fat yummy.0
