We Need a Little Stuffing Now

I ate within my calories on Thanksgiving. That resulted in us having LOTS and LOTS of chestnut stuffing left over. That is my favorite Thanksgiving food, but very calorie dense at over 500 calories per cup (and that is with LIGHT butter, not the regular stuff my mother used all those years).

Mrs.TFT portioned them out into 1/2 cup (254 calorie) servings in small freezerproof zip top bags. Now, whenever I feel like I "need a little stuffing," I place a frozen stuffing puck into a microwavable bowl, and 1 1/2 minute later, voila.... Thanksgiving. Pretty cool!

I'll make turkey vegetable soup with the carcass tomorrow! Plan to portion it out for the freezer too. Yum!

If I knew you better, I'd have said, "How'd you know I just gave her the tip?" But since I don't know you well, I won't say that. ;-)
