Vegetarian food - help please!

Hi all,
We're not vegetarian but we're thinking of including more vegetarian meals in our diet, for variety as much as anything else. I wondered if any of you have a favourite recipe or 2 you'd like to share?

Check out the Happy Herbivore website for some quick and EASY recipes, and last one is huge for me since a lot of veggie dishes sometimes use a lot of ingredients.0

I have been vegetarian for decades,. and pretty much every week I make what I call a hobo stew, just with anything around the house: a can of organic vegetarian soup or Indian sauce, whatever vegetables are fresh or on sale, whatever leftovers we may have if we went out the day before etc., maybe organic beans or lentils, and organic quinoa or quorn roast or both for good protein, and then I add up the ingredients here and it tells me what the nutritional value is. I have not had a bad one yet, even though at times I have listed them as 'complete bottom of the barrel hobo stew' and still it all works together fine, especially the next day, and can last for a few days, to eat or freeze. I own the Happy Herbivore and I love it. I'm the only one in my home that doesn't eat meat but my sons like the veggie dishes I prepare. One of my favorites are vegan tacos, I switch between vegetarian and vegan. For breakfast I would prepare breakfast wraps with wheat tortillas, soy bacon lettuce tomatoes a little ketchup (I love ketchup lol) not much tho just for a lil zing and SOMETIMES a little shredded cheese and there:)0

Many egg and pasta dishes can be adjusted to suit a vegetarian. Different sauces and veggies can be added to suit whatever you need. Lots of soups too! google vegetarian recipes!0

I'm veggie, and I often just look at non veggie recipes and adapt. For instance, using quorn instead of chick or mince, or replacing the meat for cheese or a more substantian veg like aubergine depending on what the recipe is.0
