Ideas for a diabetic friendly pie/cake ?!

Hey guys
I'm searching the whole web for diabetic friendly cakes/pies/cupcakes because I need to prepare one for my mother-in-law on Monday.
I'm a passionate baker but this is by far the only category I do not have covered... I find plenty of recipes, but I don't want to just try one and then cut the cake and find it is bad in taste... Maybe you would share your favourite ones?

Here is a pumpkin pie on my blog. The hazelnut crust is fabulous and can be used for a cheesecake as well as the pie! Diabetic friendly cheese cake recipes can be found all over the web. Pick one if pumpkin is not to your liking!

would love to try it but maybe on another occasion since the only store I can buy coconut milk at is closed tomorrow (live in Ecuador).

lol, we don't have much of this "fancy" stuff down here... I know how to make it but nuts are pretty expensive down here, so I try to avoid them as much as I can.. I'm lucky that one supermarket chain has soy milk now... Sometimes I'm really jealous of you guys buying all the cool stuff for baking0

How about a berry and egg dish? There is one that is on my blog that is like a souffle. Choose fruit that is in season and follow the directions. It is very light and the texture is more airy than a pancake.0
