HELP!! Diabetic friendly cake/pie recipe ?!

Hey guys
I posted this in the food and nutrition section, but maybe I have more luck here :)
I need to prepare a cake/pie/cupcakes (whatever I can transport to her house) for my diabetic mother-in-law.

After searching the whole web and finding some recipes, I wondered if they were actually "good". I'm a passionate baker and that's the only field I have not covered and need of an approved recipe. Would be bad to prepare something special so she can have some and then it tastes like crap...

Hope someone might help me :/

    Use a Pillsbury "sugar free" cake mix. Use unsweetened applesauce in place of the oil, and 4 egg whites instead of the 3 eggs, use the amount of water indicated. Bake as directed on box. I make cupcakes and top each one with a tablespoon of "no sugar added" cherry or apple pie filling. My family likes these.
