Microwaveable Protein Cupcakes

I found these on a blog and I fell in love tonight!!!
1/2 scoop cocoa protein powder (appx. 1.5 tbsp)
1 tbsp cocoa powder
1/4 tsp. baking powder
2 tsp. sugar or whatever sweetener you like
1 egg white
1 tbsp applesauce or pumpkin
Mix the first 4 ingredients in a coffee mug - mix in the egg white and pumpkin. Stir until the batter is thick.
Microwave for 1 minute, loosen cake with knife around edges, and flip mug over plate to gently release it.
Cut the cake in half and top it with your favorite spread! I had mine with peanut butter, but you could do cream cheese, yogurt, etc.
Each cake has approximately 90 calories, 6 grams of fat, and about 10 grams protein! (without topping)
Enjoy! It's delicious!

I have been making these all the time since you posted this!! I calculated the nutritional info and added it to the database. It is based on the recipe using EAS 100% Whey Protein, No Sugar Added Applesauce, 2 Packets Splenda, and the other ingredients. Search "Microwaveable Protein Cupcakes" if you have been eating them as much as I have and don't feel like adding the ingredients separately to your diary.0

Hmmmm ... how would it turn out with vanilla protein powder, I wonder?
I tried this with Vanilla powder and put a little extra cocoa powder in, first time I have made this though so cannot compare to using chocolate protein powder. I found this very very dry, was thinking using the whole egg would make it moist but not sure if you could do this? I also used my homemade apple sauce which may not be as moist as other apple sauces.
You definitely needed a topping on it to help it go down.
BUT good for low calorie cupcake type treat. :-)0 -
