I like to make omelettes and breakfast burritos on the weekend.
I also sometimes make breakfast potatoes with eggs and turkey sausage mixed in it along with veggies.
Cheese blintzes with fresh fruit are also yummy.0 -
We get up really late on sundays and don't have lunch. So we brunch
cereal
fresh juice
coffee/ tea
fruit salad with yogurt and granola
pancakes or waffles
scrambled eggs with bacon
maybe a cupcake
we eat so much on sundays that we stay full till dinner. THANK GOD TOMORROW IS SUNDAY0 -

The above comments are great suggestions, also try baking your own breakfast muffins, there's so many ways so have fun with it. Boost it up with protein powder.0

Have you ever looked up overnight oatmeal or oatmeal in a jar recipes? Tons of varients. I'm totally into using unsweetened vanilla coconut almond milk right now, rolled oats... and tomorrows oatmeal has some plain yogurt in it, lemon, stevia, and some coconut creme stuff I picked up at costco in the 'jam/jelly' aisle. It's like a low sugar coconut curd.
I've used protein plus peanut flour and banana, frozen fruit, various low sugar jams, etc.
You can add protein powder or nuts for more protein. Folks put in various fu fu things. Whatever is healthy, tasty, and filling.
Very tasty and fun to experiment.0 -
Baked oatmeal is my current favorite thing, here is a good recipe that I've used before:

I've made it with apples & raisins, but berries sprinkled on top are really good too. It's delicious & easy :happy:0 -

Something else that's easy are homemade egg McMuffins...basically an English muffin, egg, Canadian bacon, & cheese. I'm a fan of Canadian bacon as a breakfast meat since it's leaner than sausage or regular bacon.
Also, check out the Hungry Girl site (http://www.hungry-girl.com/) for lots of great recipes & healthy eating tips. I get the daily newsletter & I really like it!0
