Favorite low GI recipe!
I was recently diagnosed with PCOS and I'm trying to eat lower on the glycemic index. I'm actually borderline underweight, so I am not concerned about calorie counts, etc..... I just need help figuring out what to eat! I'm in that phase at the beginning of a diet where I feel really restricted, like I can't eat anything :frown:
There are a lot of search engines out there that will tell me the GI value of specific foods, but the confusing thing to me is that GI values change when you mix certain foods with other foods. In other words, I don't understand what foods I can pair with what other foods to help myself maintain a level blood sugar for longer, as well as help my body absorb nutrients and such.
So, rather than giving me a single food (for example, grapes), I'm interested in your favorite RECIPE or MEAL that overall is low GI.

Great thread! I tend to eat pretty low GI (others in my life are happier if my blood sugar levels don't spike and crash lol)

hey ! i was diagnosed with pcos almost 3 yrs ago .. i found some herbs helped but my diet helped the most deff ! i did the 17 day diet , u can eat as much as u want , but do the 3 cycles of 17 days for sure ! ... like i said just eat aaa tttoonn of the foods on there & forget about the green tea & water w. lemon in the morning ( cause its for weight loss , which u dnt want) . it helps hormone stability because it changes ur metabolism ... all hormonal problems r metabolic disorders.. helped me ton & also got pregnant ! =]0

I was diagnosed with PCOS a little over three years ago as well and I have pretty much changed my diet to be completely low gi. It has helped me lose weight and I feel a lot better, no crashing, and a lot more energy. There are a couple products I would recommend, first and probably the one I eat the most is barley. I cook it all kinds of different ways but its low gi and keeps me full. Quaker makes a quick cook kind you can find on the rice aisle. One of the recipes is barley minestrone soup....
4 cups chicken or veg broth
2 garlic cloves
ground chicken, ground turkey, or tofu (I like the boco soy meat or ground turkey the best)
1 can diced tomatoes (The basil flavor is my fav)
1 can dark kidney beans
1 cup white wine
salt & pepper
Barley (I normally do like 1/2 cup, it doubles in size so don't use to much)
I also eat quinoa and fish, apples and sweet potatoes, veggies and tofu stir fry(either with curry or soy sauce).
My Favorite breakfast foods are oatmeal (I add a few raisins and a tablespoon sugar free maple syrup), al bran with almond milk , muffins(try making muffins with oat bran and honey instead of flour and sugar, need to add more baking soda or powder). One of my fav recipes I eat is a little higher on the gi scale but it is just tomatoes, polenta, chives, red peppers, onions, a little fat free or soy cheese, and egg beaters, bake as a casserole or in muffin cups.
I also have a few recipes Ive gotten our of books on pcos, so maybe you could check some out at a library, they normally are pretty good.
