Lunch ideas?

I'm having a hard time coming up with easy food ideas for lunch and i'm starting to get really hungry so if you guys can share what you have for lunch would be great :) xx

    My lunch is almost always one of three things:

    A big salad with protein and homemade dressing.
    Leftovers
    Rice crackers with tuna and mayo
  • I have basically been having salad every day!

    Think that will get dull fast especially in the really cold weather.

    I love a turkey sandwich on whole wheat bread with lettuce, tomato, cucumber, onion and mustard.

    Campbell's cream of mushroom soup, with 1/3 can of soymilk added to it. It's not the healthiest choice nutrition-wise, but it's 280 calories, filling, satisfies a salt craving & barely any carbs!

    I usually make boiled chicken for the week (I love dark meat even though it's not that great but is the most flavorful) and eat it with rice cups (Minute Rice microwave cups). I sometimes stir in some salsa. As a side, I make cut up peppers (red, green, yellow), with cucumbers and green olives and sprinkle Mrs. Dash Garlic and Herb salt. That is usually my salad.

    If I am still hungry, I will eat celery with low-fat veggie cream cheese. All that fiber fills me up. :)

    I'm having a cup of apple butternut squash soup, half a honey tangerine, some baby carrots and a sandwich made of a small whole wheat pita with honey maple turkey, sliced granny smith apple, a wedge of laughing cow light swiss, lemon hummus, and baby spinach. Yum!

    YUP, now that the weather is cool or FREEZING it is all about soup... I keep a few cans of campbells 100% nautral (lower sodium ones) at work... or if I have time I will make a big pot of soup and freeze containers of it for quick meals...
  • I would say apple slides turkey sandwich. It's really easy to make and easy to feel full as well.

    My lunch was:

    Panera Bread - Half Classic Grilled Cheese on All Natural White Miche, 3.75 oz (290)
    Panera - Cup of Chicken Noodle Soup, 9.5 oz (80)
    Side - Dill Pickle Spear, 1 spear (5)
    TOTAL: (375)
  • A can of Progresso light Veggie and Barley soup, and a ham sandwich: 320 calories. Satisfying and healthy.
  • I take 6 slices of turkey, 3 wedges of laughing cow cheese, and 15 green olives. Then at lunchtime, I take two pieces of turkey and spread one cheese wedge on it and lineup 5 olives in the middle and roll it up. I do that with 3 rollups and it is delicious, fast, easy and filling.

    My favourite is a fresh supermarket soup - I cook up 20g of pasta twists and a chopped up carrot and add this to the soup. It makes a really satisfying bowlful for about 300 cals - yummy especially with it getting colder.

    A really healthy friend of mine likes to get about two cups of lettuce, add in quinoa, and some chopped vegetables (sometimes falafel) and I have to say, I couldn't help but sneak bites from her lunch here and there. It was delicious and super healthy/filling.

    My go-to is pumpkin greek yogurt - I mix 1 cup of Fage 0% greek yogurt, 1/2 cup Trader Joe's canned pumpkin, and flavor with some pumpkin pie spice, cinnamon, vanilla extract, and Truvia.

    It's super delicious! It comes up to about 186cal, 25g protein, 5g fiber, 25g carbs, 0g fat.

    I second this idea! It's super yummy, sometimes I'll mix almonds/peanuts/hazelnuts/walnuts and stevia in greek yogurt too.
    Adding a tsp or 2 of cocoa powder can make a delicious treat-- with walnuts and almonds, especially!

    Or you can go savory with some tuna, capers, and spices like oregano and thyme! Or make it with veg like broccoli slaw, carrots, and cabbage! Greek yogurt is versatile, can be used as a cream cheese or sour cream replacement, a creamy dessert, ect.!

    Usually a salad every day made with spinach and some protein in it. Tuna, turkey or a leftover. a couple homemade croutons. Delicious

    -Ham and low fat Swiss, tomato, spinach on Whole grain bread with mustard or hummus.
    -Seared Ahi tuna with avocado and sesame ginger dressing.
    -Blacken chicken breast with broccoli, snow peas and carrots.
    -Garbanzo bean and tuna salad with walnuts and lite blue cheese dressing over spinach.

    i make tofurkey sandwiches (you can use real turkey instead), half a wedge of light laughing cow cheese on one piece of bread, 1 tbsp of roasted red hummus on the other, the tofurkey and a few romaine hearts.
    soup always works too, with a side of fruit.
    pb & j sandwich or pb & banana sandwich
    protein shake with 1 scoop choc protein powder, half a banana, 1 tbsp pb, 1/2 cup coconut milk, half cup of water and 3 ice cubes, blend.
    a pizzadilla (low carb tortilla with shredded mozzarella, spaghetti sauce and veggies, fold in half and cook like a quesadilla)
    salad with banana peppers, meatless chicken (or real if you eat meat), olives, jalepenos, onion, mushroom, peppers, chipotle ranch dressing
    quinoa with spaghetti sauce and grated cheese with some fresh veggie slices or fresh fruit on the side
    fresh mozzarella, roasted red peppers, shredded lettuce on a kaiser roll or whole wheat bread with oil & balsamic vinaigrette

    Omelettes.

    All you need is eggs, maybe some cream or milk, and whatever topping/filling you feel like.

    You can have ham and cheese, chicken and tomato, ground beef and mushrooms, sausage and peas, bacon and paprika...

    You can even be all fancy and make something like omurice (cookingwithdog on youtube has a super yummy recipie which is really easy to do if you have rice and chicken leftovers) or something similar.

    bag of broccoli slaw-cook it in a skillet with some olive oil or just "steam" it with a bit of water.
    Add in cooked chopped chicken or canned chicken breast
    Heat and top with oriental dressing. Add mandarin oranges and almonds if desired as well.

  • I often make a big pot of soup on Sunday and split it up into individual containers so I can grab and go on my way to work. This week it's chicken soup with egg noodles. I also make chicken and rice soup, chili, avgolemono, lentil soup with sausage, stuff like that. I make chicken in the crock pot too, cooked with salsa and black beans and corn and taco seasoning, and shred that up and put it with rice for lunches. Another favorite is red beans and rice, I cook peppers and onions and sausage, then add the water and make a package of goya red beans and rice right in that pot so it all cooks together. All quick meals that make a bunch of servings so I don't have to think about it in the morning before I leave.
