I am 100% Latina, and most of our food tends to be a little bit high on calories...i love my aguacate and rice but i need healthier choices...If you guys have some healthy Latino recipes then please share <3

    My boyfriend is Mexican and LOVES his food. Instead of carne asada, I put a roast in the crockpot with chipotle and let it cook all day. when its done i shred up the meat and then put it in a pan with sliced onions. Cook that up with a little bit of water (not oil) until the onions are cooked. Put the meat in half corn/half flour tortillas and top with cilantro, onion and limon. comes out to about 300 cals per taco/burrito.

    At home I like to make Mexican stews, either for tacos de guisado or just to eat by themselves. They are very flavorful and don't require a lot of oil. Recently I made pork braised with tomatillos and escabeche, which was amazing and really satisfying with homemade tortillas (recipe: http://thestir.cafemom.com/food_party/111710/tomatillo_pork_braise_a_crock). I also like calabacitas as a side or taco filling, or greens (swiss chard, spinach, etc) and onions cooked in a little vegetable/chicken broth, topped with a little queso fresco.

    I get a lot of these ideas from the cookbook Mexican Everyday by Rick Bayless. Just flipping through it, there are a lot of things I haven't tried yet that sound super flavorful, easy to make, and reasonably healthy.

    Also recently made roasted sweet potato and black bean chilaquiles (recipe: http://www.seriouseats.com/recipes/2012/11/sweet-potato-and-black-bean-chilaquiles-recipe.html). It was really good and a pretty satisfying portion was about 650 calories, but you could easily reduce the amount of cheese in the recipe to make it healthier.
