Gluten/Dairy free anyone? Need some ideas!!

my husband is gluten intolerant and i am lactose intolerant...so i know exactly how you feel
We do a monthly meat bundle from a local market and it includes a huge variety of meats for us to choose from each evening.
We always grill out or bake the meat with gluten free seasonings...
We then do potatoes--we mix it up and bake them, mash them, grill them...
Or we do brown rice....
then we do veggies.
Many nights i do grilled red cabbage
Danny loves when i make meatloaf.
or I make a mean bean and beef casserole.
basically just take meats/plants and get creative lol0 -
Yep!
First off - avoid gluten free products. IMO, they taste like crap, and weigh a crapton. Second - avoid dairy substitutes. Well, I guess almond milk or coconut milk aren't so bad... soy, ew, no. Gross.
With this in mind, a great base of your meals with be from meat and veggies.
There's plenty of recipes that can be found within your requirements, I personally recommend googling "Paleo recipes". Why Paleo? Gluten-free, dairy-free, and pretty damn tasty.
My own contribution? Almond crusted salmon with sweet potato fries.
-Salmon fillets.
-Egg.
-Sweet potatoes.
-Assorted spices.
-Almonds, crushed.
Separate the egg white and the egg yolk. Mix your spices (I use lime, black pepper, hot sauce and garlic) into the egg white in a bowl. Dip your salmon fillet(s) into the bowl and coat completely. Then, sprinkle the almonds on top. Place in a oven-safe dish.
Slice your sweet potato into wedges and rub the egg yolk over them. Then put the wedges on a tray and sprinkle your favourite seasoning over them (I like cumin and paprika, maybe Cajun).
Stick in the oven for 15-20 minutes at 200C (I think 365F?), then serve and enjoy! Fish and chips!Maybe even make a salsa to accompany it from sliced/mashed tomato and cucumber.
This also works wth other fish or chicken if you don't like/have salmon, and is one of my favourite meals.0 -

That sounds great! I'm definitely going to have to try... And yeah, I don't like specifically "Gluten Free" breads and what not. But rice sticks from the Thai food section at the grocery store are pretty good and GF.0 -
