Green Velvet Soup:

Cook: 1 medium chopped onion, 2 sliced stalks celery, 2 medium potatoes, 3/4 cup split peas, 2 bay leaves, and 6 cups water or stock. Bring to boil and then simmer for an hour, covered if possible. Remove bay leaves (I don't until before eating). Add 2 chopped medium zucchini, 1 medium stalk broccoli, 1 bunch fresh spinach (washed and chopped), 1/2 teaspoon dried basil, 1/4 teaspoon black pepper, and 1 1/2 teaspoon salt. Simmer another 20 minutes. Blend in blender in small batches, then heat until steamy. Can also cook in slow cooker for 4-6 hours instead. Remember this recipe especially for after oral surgery or other times when you need food that you don't have to chew. This soup is so, so good and easy to digest.
