Spanakopita Pie! serves 8

Ingredients:
Olive Oil
A 2-pound bag of frozen spinach
A bunch of scallions, sliced
1/4 cup chopped parsley
1/4 cup chopped dill
Zest of one lemon
12 sheets of filo

Preheat the oven to 350F. Brush a 9x13 inch baking dish with olive oil.

Thaw the spinach and try to squeeze out some of the water. Mix with the scallions, dill, parsley, lemon zest, and salt and pepper to taste.

Lay one sheet of filo in the prepared dish. Brush with olive oil, and top with another sheet. Repeat until you have 6 sheets in the dish. Then pour in the spinach mixture and spread it out evenly. Top with another sheet of filo, brush with olive oil, top with another sheet, and so on until there are 6 filo sheets on top of the spinach layer. Brush the top with more olive oil. I used 0.375 cup of olive oil total, but you might end up using less.

Pop the dish in the oven and bake for about 30 minutes. Once the top gets to be a nice golden color you might want to cover the dish with foil to keep it from getting any darker. Remove from the over and let it settle for a few minutes, then cut into 8 pieces.

One piece is 187 calories, 14g of carbs, 14g of fat, 4g of protein, 0g of cholesterol.

    One more thing-- if you're tying to be low-fat you could probably spray in between the filo layers with an olive oil spray. Personally I don't think there's anything wrong with consuming a lot of olive oil though!
