Healthy Pumpkin Cookies That Don’t Taste Healthy

RECIPE
■1 cup canned pumpkin (not pumpkin pie mix)
■3/4 cup sugar
■1/2 cup unsweetened applesauce
■1 egg
■1 Tbs. vanilla
■2 cups whole wheat flour
■2 tsp. baking powder
■2 tsp. cinnamon
■1/8 tsp. nutmeg
■1/8 tsp. ground cloves
■1/2 tsp. salt
■1 tsp. baking soda
■1 tsp. milk
■1 cup semi-sweet chocolate chips

DIRECTIONS
1.Preheat oven to 350 degrees
2.Combine pumpkin, sugar, applesauce, egg and vanilla and mix well (we’ll call this the WET mixture)
3.Combine by whisking: flour, baking powder, cinnamon, nutmeg, cloves and salt in a separate bowl (aka DRY mixture)
4.Dissolve baking soda in milk, then add to WET mixture
5.Gradually add DRY mixture to WET and mix until just combined
6.Fold in chocolate chips
7.Grease cookie sheet and use an ice cream scoop to measure out
8.Bake for 10-12 minutes until they no longer look wet
9.Let sit on pan for 2 minutes then remove to a wire rack to cool

    super easy and super yummy! but i think they need more baking time than directed...mine needed more like 15 minutes.

    Thanks Silvergurl518 for sharing this recipe, but my kids love to have dark chocolate cookies, its there favorite. I would be sharing its recipe soon and will even try the one share by you. I have been planning to sell my cookies for those people who require it as corporate gifts. Soon I am starting a small bakery with my elder sister who is also a book baker. Hoping for the best.

    Pumpkin chocolate chip cookies have been my FAVORITE cookies since I was a small child.

    I did try making these a few weeks ago with whole wheat flour and it turned out pretty good.
    When I make these next week, I will try the adjustments this recipe makes and see how they turn out.

    ok I made these...I did alter the recipe since I just used what I had on hand without needing to go shopping. they are wonderful!!!
    I used old fashioned rolled oats instead of whole wheat flour. I processed 1 cup in food processor left 2nd cup whole. I didn't have baking soda and didn't need milk. I also used only 1/2 cup of mini chocolate chips. I used 1/3 cup of brown sugar not packed and 1/4 cup splenda. My version made 29 small cookies (using a small cookie scoop) at 54 calories each.
