Mediterranean Turkey Burgers
Serve a light and fresh turkey burger flavored with pesto and feta cheese. A spicy and creamy tzatziki sauce is great spread on the burgers or served on the side for dipping.
Worthy of a special occasion
Yield: 4 servings (serving size: 1 stuffed pita half)

Ingredients
1/2 cup panko (Japanese breadcrumbs)
1/4 cup (1 ounce) crumbled feta cheese $
1 tablespoon minced red onion $
2 tablespoons commercial pesto
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound ground turkey breast $
1 garlic clove, minced
Cooking spray $
2 cups arugula
2 (6-inch) whole-wheat pitas, toasted and halved
Preparation
1. Combine first 8 ingredients in a bowl; mix until combined. Divide panko mixture into 4 portions, shaping each into a 1/2-inch-thick oval patty.
2. Heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Add patties to pan; cook 6 minutes on each side or until done. Place 1 patty and 1/2 cup arugula in each pita half.
Tzatziki sauce: Combine 1/2 cup plain low-fat, Greek-style yogurt; 1/4 cup finely chopped seeded cucumber; 1/4 teaspoon salt; and 1/8 teaspoon ground red pepper. Serve with sliced bell pepper and celery sticks.0 -

Asian turkey burgers. I don't use an exact recipe but I put the following into a bowl:
1lb ground turkey
a little bit of sesame oil, maybe a teaspoon
soy sauce to your liking
sliced green onions (just the white parts)
fresh grated ginger

My favorite are Hungry Girl's Unique Greek Turkey Burgers.
Ingredients:
1/4 cup finely chopped onion
1 tsp. chopped garlic
4 cups chopped spinach leaves
1 lb. raw lean ground turkey
2 large egg whites or 1/4 cup liquid egg whites
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. salt
1/4 tsp. black pepper
1/2 cup crumbled fat-free feta cheese
Optional: large lettuce leaves, sliced onion, sliced tomato
Directions:
Bring a large skillet sprayed with nonstick spray to medium-high heat on the stove. Add onion and garlic and, stirring often, cook until softened, about 4 minutes.
Add spinach to the skillet with onion and garlic. Stirring often, cook until spinach has wilted and excess moisture has evaporated, 3 - 5 minutes.
Remove skillet from heat. Once cool enough to handle, carefully blot away any excess moisture from the onion-spinach mixture with paper towels. Set aside.
In a large bowl, combine turkey, egg whites, basil, oregano, salt, and pepper. Using your hands, mix well. Add cooked veggies and feta cheese to the bowl. Using your hands, mix until uniform.
Evenly divide turkey mixture and firmly form into four patties. (Cover and refrigerate if not cooking immediately.)
Bring a grill (or skillet or grill pan) sprayed with nonstick spray to medium heat. Add patties, cover, and cook for 5 - 8 minutes per side, until cooked through. If using a skillet or grill pan, work in batches, removing skillet or pan from heat between batches to re-spray. (And don't worry if your lid isn't a perfect fit when covering!)
Eat your patties with a knife and fork or, if you like, wrap them up in some lettuce leaves with onion and tomato. Enjoy!
MAKES 4 SERVINGS
I use reduced fat feta instead of fat free and only 1 egg white. I find 2 makes it far too moist and sticky.0 -
preheat frying pan
take turkey burger out of freezer
add oil to pan
toss frozen patty on the pan
season with salt, pepper, garlic powder, cumin
add tomato sauce and/or mozzarella and/or ketchup if desired
serve on a bed of greens or a bun0 -
Chili powder, cayenne pepper powder and crushed red peppers are an option.....0

Ground turkey (I buy turkey breast and ground it myself)
Onion - chopped
Garlic - diced
Tomato paste
Boiled spinach - chopped
Parmezan - grated (just for flavor)
Egg and flour to make the composition stick
Condiments
I just mix them up (the proportion may vary, sometimes I like to add more veggies to it), make patties and that's it.
I grill them.

Blackened Turkey-veggie burger with blue cheese
Jennie-O - Extra Lean Ground Turkey 99/1, 1 container (20 oz ea.)
Mushrooms - Raw, 2 large chopped
Squash - Zucchini, includes skin, raw, 0.25 cup, chopped
Shallots - Raw, 1 tbsp chopped
Garlic - Raw, 2 clove chopped
Stella - Reduced Fat Crumbled Blue Cheese, 1/4 cup
Oil - Olive, 1 tablespoon
Trader Joe's - Spices of the World - 21 Seasoning Salute, 1 tsp. (0.6g)
Blackened Seasoning, 1 tsp
saute shallots and garlic til soft
mix in with remaining ingredients, shape into patties and sprinkle with blackened seasoning
Per Serving: 166cals 1carb 27protein 5fat

they cook up better on the grill if you freeze them first! i make a bunch at once and freeze them all with wax paper between them.0

I don't really have a recipe, but I just chop up some onion and green bell pepper (fine) and cook in my grill pan with a little black pepper. I eat it with no bun and I have a spinach salad on the side. Sometimes I put a tablespoon or two of roasted red pepper hummus on top. It is so good0

They are basically just turkey mince and courgettes so extremely low calorie and healthy for a burger. You can make them italian like the recipe and add italian type herbs or I sometimes like to make them more kofta shaped and add spices like ground coriander and cumin.
To make the cooking of them extra healthy either dry barbeque or grill or griddle them. I've been baking them in the oven recently in a roasting tin, but during you may have to get them out halfway through and pour off alot of liquid that has left them, but if you the return them to the oven they cook really well
