any vegetarian recipes

does anyone have any vegetarian recipes that my kids will really eat. my girls are ages 4 and almost 2 theyre starting to get really pickie but im trying to open theyre option to mover vegetarian type dishes im gonna try to be a vegetarian but not to strict like have chicken and fish once a week but other than that all fruits and veggies any help please :huh: :heart: :smile:

    Lentil Curry

    Serves 4

    300g lentils
    Tin of tomatoes
    100g onion, finely diced
    100g carrot, finely dicec
    100g celery, finely diced
    320g cauliflower, divided into florets
    Curry powder of your choice, around 1tbsp
    1 tsp cumin
    1 tsp garam masala
    1-3 chillies if you like heat
    1 Tbsp oil
    150g plain yogurt, low fat or fat free
    Zest of a lemon

    1. Heat oil in pan, add spices, fry until aromas release
    2. Reduce heat, add finely diced veggies and chilies if using, soften
    3. Add lentils, stir until coated in spice/veggie/oil mix
    4. Pour in can of tomatoes, rinse out can with water, add water
    5. Simmer 25-30 minutes, with 15 minutes to go add cauliflower, at end add lemon zest
    6. Take off heat, stir through yogurt. Serve with brown rice, salad and raita (grated cucumber and yogurt)
