    I think that was just her way of being 13... unless you are serving pot roast every night, she can deal with it. There are worse things in the world than boring food. If she's really bored, she could always try vegemite (sorry Aussies).

    1 3lb roast. 2 packets of Au Jus mix. Fill the crockpot with water until its almost covering the roast. Pour in the 2 Au Jus packets. Turn it on Low when you go to work and when you get home its done. Very rich and delicious.

    Not sure if everyone's family does this, as my Italian husband had never heard such a thing, but we've always dipped it in ketchup. It seems like such an awful thing to do with a lovely roast that has been permeating the air (often for HOURS), creating a warm and invting feeling and, to me, the memory of being at my Grandmothers house on a Sunday. I do not like ketchup much, yet this is still one thing I will use it on. And, my husband? He does it, too.

    The thought of water covering the meat makes me sick... you don't have to put all that liquid in your crock, people!! Your meat will taste just as delicious and be just as tender with a small amount of liquid on low for 8hrs.



    Boiled meat is gross.

    Pot roast is my favorite thing.
    I put some chopped bacon in the pan with water, and render all the fat. (the water allows you to render the fat without burning the bacon). Sear roast in bacon fat on all sides and set aside. Then sautee onion, celery, carrot and garlic. Add some tomato paste and spices and a whole bottle of Zinfandel or other red wine. Nestle the roast in it, cover and cook for 3 hours at 300.

    You can do this in the crockpot, too.

    Then remove roast, use a stick blender to blend the sauce smooth and strain into a pan. Turn on high and reduce until thickened and glossy. It's a messy job and sort of worky but SO GOOD.

    Pot roast is pot roast, and it's not the most super exciting meal. However, it IS super delicious and comforting.
    I use dark beer or red wine, and rosemary and thyme. plenty of salt and pepper. Maybe try switching up the veggies--add parsnips to the usual carrots and potatoes. Hmmm...I see a pot roast in my weekend...

    Also, try thickening the juice when it's done and serve with mashed potatoes instead of roasting potatoes with the meat...

    I've used kale and pearl onions with the potatoes and carrots... I love it... her... not so much.

    It's called 'braising'. You don't boil the water.

    I always use a packet of Liptons onion soup mix and a packet of mushroom gravy mix & brown gravy packets whisk all together then our on meat and cook, it will thicken slightly as it cooks, I also add carrots and potatoes then when its almost done I take about a cup or so of the juice out and wisk some milk and flour to make it thicken and add it back to the crock pot. ! YUMMY

    Pork Pot Roast - Sirloin works nicely... Add 8 chopped tomatillos, half a large white onion fine dice, eight cloves of garlic, one serrano pepper diced fine, one jalapeno pepper diced fine, one teaspoon of cumin, water to cover... cook until internal temp of 160 in crock pot with thermometer... remove meat shred and put back into pot add juice of two limes, and half bunch of fresh cilantro. Serve with tortillas(or mandoline sliced jicama steamed to soften), shredded cabbage, avocado, nonfat greek yogurt and pico de gallo salsa (tomato, onion, jalapeno or serrano, garlic, lime juice).
    Beef Pot Roast - Sirloin works nicely... Add two cans of tomato paste (no salt added), half a large onion fine dice, four cloves of garlic, two canned chipotle peppers (use the whole can if everyone likes some serious heat), two teaspoons of cumin, water to cover... cook until internal temp of 150 in crock pot with thermometer... remove meat shred and put back into pot, add tablespoon of red wine vinegar, and half bunch of fresh cilantro. Serve with tortillas(or mandoline sliced jicama), shredded lettuce, avocado, nonfat greek yogurt, and pico de gallo or chipotle salsa (just blend a can of chipotle peppers in adobo with one half cup of water and one teaspoon of olive oil.

    I have to concur with the suggestions to sear (and get those good caramelized brown bits) before putting it into the crock pot. [I use a pressure cooker for a bit over an hour. Sear and cook in on pot, easier IMHO.]

    A couple of cloves of fresh garlic, plenty of onions, (I dump in both on the tail end of searing the beef). Good beef stock or broth a little red wine or beer (50/50 broth/booze) plenty of pepper. Once cooked to point of shredding I turn off heat add quality plain yogurt or sour cream and use an immersion blender to make a lovely sauce and serve with your favorite carby side (mashed or roasted potatoes, egg noodles, works well with roasted cauliflower, or low carb Shiritaki noodles too). I have also thrown spinach/arugula,green peas, sauteed mushrooms after being blended for texture.

    I know, but I like to try new things and I saw it as an opportunity. Just because we are parents doesn't mean we can't accomodate a little. I have trouble getting this kid to eat because she is picky. My ex-boyfriend used to say that it was because I didn't make her eat. But forcing food on children reinforces bad eating habits, (speaking from my own experiences) I like to experiment with cooking so I really didn't see it as a big deal to find a new way of preparing it. She likes meat and carrots and potatoes... she just wants it to have more flavor.

    Ive done it with a coke, with wine and with canned green beans (with juice). I still havent figured out how to make it perfect. But I LOVE the veggies that cook with it.

    When I cook chicken in the crockpot, I often use: 28 oz can of tomatoes, 1 cup of salsa (or to taste), some taco seasoning - as much spice as works for you - and vegetables I have around (onions, carrots, celery, mushrooms) - I think this would be great with beef too.
