Any good healthy chicken marinades you guys have?

I usually buy organic chicken from Costco, just the boneless skinless breasts... I usually just grill it straight or stuff it and bake it. I'd like to marinate it then grill a bunch of it, but most of the marinades I see are loaded with sugars.

Any suggestions?

    Balsamic vinegar and honey is REALLYYY good. Let it sit in that overnight and then cook it in a frying pan over medium heat, or bake it. It caramelizes into a really yummy glaze.

    If you can find it, they make sugar free honey (probably has artificial sweeteners.... but I'm not on the "splenda-will-lead-to-your-slow-painful-death" bandwagon, so I'll take it once in awhile)
  • I just got done making one of the costco's chicken breasts. This one is easy peasy, no sugar and delish. Just throw one in a frying pan, add a bit of olive oil, sprinkle herbs de provence and a little salt. Before you serve, add a bit of lemon and I ate mine today with baby arugula. It may not be a marinade per say but it is really good, easy and FAST.

    Oh and I made 3 and stuffed two in a little baggy for future eating with the extra juice in the pan.

    Oregano, lemon, garlic and olive oil
    Lemon, pepper, chicken broth and thyme
    Lemon, greek (or plain) yogurt and curry
    Basil, lemon and garlic
    Straight light italian dressing

    I usually always adda little chicken broth to any marinade, I find it makes the chicken really juicy.
