Hamburger vegetable crock pot soup

Wonderful comfort soup. This was served at a local tavern and I finally got the recipe from one of the family.
Low calorie, filling, good for cleaning out the fridge of left over vegetables, bits of pasta, etc. Easy to change up.
This is my go to soup when I want to start a new diet, I leave out the ground beef and add shredded cabbage for an "all you can eat" soup. You could also substitute ground turkey for the beef.

1 pound ground beef

10.5 oz. can condensed beef broth

12 oz. can chopped tomatoes

1 envelope dry onion soup mix

2 cups sliced carrots

1/4 cup fresh Italian parsley

1/4 cup celery

1/4 tsp. black pepper

1/4 tsp. dried oregano leaves

1 bay leaf

1/4 tsp. basil

Brown ground beef, drain and set aside. Add the ground beef plus all of the ingredients into a 6 quart crock pot.
Add water to fill the crock pot or to taste. Let cook on low for 8-10 hours. I know the "to taste" on the water is a little strange. The handwritten recipe didn't include ANY water, but without water it is too strong and doesn't taste right. Both the mother and her daughter have passed on, so I have no one to ask.

    bump! Was trying to figure out what to have with ground beef on Wednesday. Problem solved?
  • Make it less strong by substituting consomme for the broth. Use a real onion sauted with the eat instead of the onion soup mix. Add a shake or three of worchestershire sauce. Tastes great. My go to soup, too. Called Hamburger soup,

    Bump. I've made something similar but didn't care for it... the family loved it tho. I wouldn't mind trying cabbage tho! :)

    For me, I want the memories so I fix it as is. I can't tell you how many years I have been trying to recreate this special soup, there is something sort of smoky from the spice combination so I am afraid to change it other than the meat and veggie mix. I love this stuff, though the sodium is very high. I used to ask the daughter for the recipe and she would give me a basic hamburger soup run down, but it never came out right. When her daughter finally made me a copy, I was very happy.

    Sounds similar to the hamburger soup my folks make, cept for the onion soup mix. Try a little beef buillion cubes (go light, they're salty) and real onions to lighten up the sodium. Very yummy!
