Passover is Here!

I've got myself on a pretty good routine for breakfast and lunch. But with Passover starting tonight, my eating is going to be all screwed up! No bread, pasta, oats, corn, etc..
What are some good breakfast ideas besides just plain old eggs?
Matzah is so heavy, and I'm not looking forward to incorporating it into my diet for a week. All I can think of is salads, proteins, potatoes for carbs, fruit, etc...
HELP!

Can you have rice? If so I like to do rice and beans and eggs... if not, I like to saute some veggies with garlic and onion and then throw in eggs... it's low cal and filling AND makes for lovely morning breath!

How about:
1) Fresh mixed fruit with yogurt
2) Apple and peanut butter0 -
No rice allowed. Apples and peanut butter sound like a tasty way to get some protein easily in the morning!0
