One of my friends had Taco "muffins" in her diary. I have never heard of them, but they sounded good, so I hunted them down. I'm sure that to some people this is old news - but I figure if it was new to me, there are others who haven't yet heard either! LOL

I found a site with a bunch of different things made in muffin tins. All of the recipes are WW friendly - I like that they are all portion controlled. Breakfast, lunch, dinner, and maybe even dessert - lots of ideas here. Once you get to looking, you can see all sorts of ways to modify them to suit your particular diet needs and create your own.

    Wow! Thanks for the post! These are awesome! I think cooking main foods like this will encourage my kids to eat better too!
