I need some of your favorite Vegetarian and Vegan Recipes

My husband is a huge meatlover but every now and then I try to cook something vegetarian which usually he is not so happy about.
Tonight on the menu: Quinoa and Black Bean Chili.

It was a huge hit! Good texture, great flavor!
We topped it with sour cream, shredded cheese and diced avocado and served cornbread on the side.0 -
Do it the fun way: play with your food! I recently switched to a complete whole foods plant based diet & am LOVING just playing with food ideas. Most recipes can be converted, but I enjoy coming up with my own. Just pick a few ingredients & see what mixes.
(I.E, rice - cook a big pot & keep in fridge for easy recipe mixes - , portabella mushrooms, celery, fresh ginger, yellow wax beans, carrots: chop all veggies up, lightly saute with grapeseed oil, add in pre-cooked brown and/or wild rice, mix together over low heat. Add seasoning to taste - chipotle pepper, garlic, basil - mix, allow to heat - garnish with Daiya vegan "cheese")0 -

I just made this one yesterday, and it was FANTASTIC. My husband said it was missing steak, but we all loved it anyway, including him. ;-)

crockpot spinach/pesto lasagna
cover the bottom of the crockpot with 1/4 of sauce. layer lasagna noodles down to make one layer (you might have to break them) smear ricotta cheese on the noodles, spread pesto over the ricotta & noodles, pile on spinach, cover with grated parmesan, mozzarella, sauce, and repeat the layers until you've used up all of your ingredients or the crockpot is full. If you're using store bought pasta sauce, add 1/4 cup of water to the pasta jar, shake it up, and pour the saucy mix over the mixture. cook for 5-6 hours on low or 3-4 hours on high. DELICIOUS!0 -

I totally agree! I haven't had a kitchen mishap in a while. Best way to cook is think about what you have & align the smells & tastes to create masterpieces. You know what most of the veggies, fruits, grains & spices smell & taste like so envision them & you'll "see" what can align One of my favs is below - it may not "sound" right, but when you align the other senses it tastes AHMAZING!
I call this Spicy Apple Pie Wild Rice: Lightly saute chopped apple in a little grapeseed oil - season lightly with cayenne, chipotle or chili, add chopped kale & french cut green beans (if choose), a few cranberries (fresh chopped is best, soak in warm water or use dried), few raisins (these just add an extra flavour), mix in pre-cooked wild rice (or a brown & wild mix), stir together, serve & top with Daiya Shredded Pepper Jack cheez.
It's like eating a healthy apple pie for your main course!0
