Chicken Cheese Steak Nachos (with picture!)
I made this tonight for dinner and it was awesome I can't have gluten, so instead of a chicken cheese steak sandwich, I topped some nacho chips with the chicken- it was SO good I think I might have it again tomorrow night for dinner!
Sorry the picture is not very good quality- I took it on my boyfriend's phone!
I'm not sure of an exact "recipe" per-say... it's whatever you like.
I used:
6 ounces of 99% fat free chicken
Chopped onion
Chopped red pepper
1 clove garlic
2 tbsp. Tostitos salsa con queso
Baked tortilla chips
Spray frying pan with cooking spray and add chopped peppers and onion. Let the peppers, garlic and onions brown up, but not burn onto the pan. Add more cooking spray if necessary. Meanwhile, I cooked the chicken in the oven then cut it into tiny pieces. Once the peppers and onions were just about all the way cooked, I added the (already cooked) chicken to the mix. Keep everything in the pan moving or it will start to burn on. Then, at the last minute add the 2 tbsp of tostitos salsa con queso and stir so it coats the whole mixture. Pour over nachos and enjoy! :bigsmile:
Obviously the nutrition would depend on exactly how much of each ingredient you use, and what brand you use. Based on what I used, my meal total was:
388 calories
35 carbs
9 grams of fat
408 mg of sodium
43 grams of protein
6 grams of fiber

Looks yummy!!! I made chicken fajitas last night and made mine into a salad! I had 4oz chicken breast, and sauteed onions, peppers, mushrooms, and minced garlic. I used Mrs. Dash Fiesta Lime seasoning and more chili powder. Served it over spinach and topped w/ salsa and fat free sour cream. Delicious!0

I love regular cheese steaks. I mean LOVE!!! But since the rolls are huge calorie vacuums, I shy away now. Recently, I have made cheese steak burritos. They are to die for! With a side of hash browns, the meal runs about 700 calories.
Here is how I make them:
In a large frying pan, saute diced onions, peppers and mushrooms in a splash of EVOO.
Move the peppers and onions to the side of the pan, and cook the meat (I use Steak-ums). I use 2 portions per burrito.
Once the meat is cooked mix the meat with the onions and peppers. (Drain off the grease at this point)
Top with Velveeta cheese (1 ounce per burrito), and mix in with the meat and vegetables.
Once the cheese is melted through, slide it all onto a large burrito tortilla, roll the burrito, and enjoy!!!0 -
