Chicken Tortilla Soup....without the Tortillas:)

Crockpot on low 6-8 hours

1# skinless, boneless chicken tenders
14.5 oz. can canned peeled tomatoes, mashed
10 oz. can enchilada sauce
1 onion, chopped
14.5 oz. can low sodium chicken broth
3-4 C. water
1 T cumin
1 T chili powder
10oz. frozen corn,
1 can black beans, rinsed

Put all ingredients in the crock pot.....that's it. I started this at 10:30 at night, woke up at 5 am and shredded the chicken.....it was delicious for lunch with my friends at work!!

I will add a hot pepper and more spices the next time because I like things spicy, but it was so yummy. You are suppose to put corn tortillas and sour cream on each serving before, but we skipped that too......very filling.
