Lasagna
Bring Italian night back to the
table with this pasta-less
version of an Italian classic!
Ingredients:
2 cups cauliflower, cooked, cooled, and
grated (see note below)
3 cups 2% shredded mozzarella
cheese, divided
1/2 cup egg beaters
1 cup fate free cottage cheese + 1/4
cup grated Parmesan cheese
8 oz lean ground turkey, cooked with
seasonings
1 1/2 cup Walden Farms marinara
sauce (or click here for a homemade
recipe)
Directions:
Preheat oven to 350 degrees. Spray
an 8"x8" baking dish with non-stick
cooking spray.
In a medium bowl, mix cauliflower, 2
cups mozzarella cheese, and eggs.
Spread 1/2 cup sauce on the bottom
of the baking dish. Spread half of the
cauliflower onto of sauce. Spread half
of the cottage cheese mixture over
cauliflower. Spread half of ground
turkey over cottage cheese, Repeat.
top with remaining 1 cup cheese.
Bake 45 minutes. Let set 10-15
minutes before serving.
NOTE: To grate cauliflower, use a salad
shooter, blender, food processor, or
cheese grater until it resembles "rice"
