Freezing meals?

As most people say prep your meals and freeze them, I've tried this recently but after they are frozen, they don't taste very good at all.
Lately I have been doing Chicken breast, rice & brocolli, is there anything that will make it a bit tastier?
Or other foods that are fine to prep/freeze?
Also these meals are for lunches at work, where I don't have access to microwaves or anything.

This isn't regarding freezing but it is regarding preparing meals ahead of time. I love as part of my meal cottage cheese and fruit. So i bought some of those disposable containers that are 1/2 cup. I am going to fill those with either 1/2 cup of the cottage cheese or 1/2 cup of my pineapples or diced peaches. Will just make it easier in making my meal. Would also help for some one making lunches to go. I wish I could find a container that would hold both of those little containers. I don't drink milk at all, yuk and double yuk so my cottage cheese and yogurt are important to me.0

If cooled and stored properly, the taste shouldn't be affected. Items like a chicken breast and vegetables for that matter, should be slightly undercooked, then cooled, wrapped and frozen. By undercooking at this "prep" step, when you thaw and reheat, the finished product will not taste overcooked. ( does that makes sense)?
As far as different ideas, one thing to do is browse the frozen section of your local market. Some items just take to the freezing process better than others. It should at least give you some ideas on what to cook for yourself.

It's generally best to freeze one pot meals, not separate items together IYSWIM and not everything freezes well - green veg needs far less reheating than chicken or rice. Try slow cooked chicken leg meat in a sauce, chicken breast tends to go dry if double cooked. Don't cook and freeze broccoli unless you are making something like soup try ready frozen fine green beans or petit pois peas. Steam don't boil the rice and just add a tiny bit of water before you microwave, basmati is tastier and less sticky than long grain rice.0

I forgot to mention, these are for lunch meals at work, where as I can't reheat anything.0

You could mix up a batch of meatloaf meat and put it into a muffin tin and freeze it, then pop out and store in a zipper bag to bake one at a time, or you can just bake the entire muffin pan full of mini meatloaves and then freeze them individually for nuking to rewarm. I do this with crustless quiches or egg muffins, I use scrambled egg, chopped up and cooked turkey bacon or turkey sausage, onion, herbs and a little cheese. I cook them and then freeze them individually and reheat whenever I want one. I also make breakfast burritos with scrambled eggs, meat of choice and homemade hashbrowns with salsa rolled up in tortillas. I freeze them and then take one out whenever I want one and microwave it, or wrap it in foil and put it in the oven to rewarm that way.0

Oh, poo, I just read your comment about not being able to reheat Well, I guess you oculd use the things I wrote about previously but just eat them at room temperature. Meatloaf sandwiches or wraps, perhaps?0

For work take those tuna packets,mayo packets,hard boiled egg,and relish packet if u like..make a sandwich or wrap.Add some fruit and yogurt.
I usually make 3 portions of my dinner and lunch and eat those during the week,I don't freeze em..just make sure its used within 3 days.0 -
