I'm not sure what we're having here today. Chicken salad maybe.
  • "redneck" - Canned chicken, pinto beans, diced canned tomatoes over brown rice. Add hot sauce. Simple and cheap.
    Microwave and enjoy.

It is winter here so that means homemade hearty soups. Today it is chicken vegetable with lots of veggies including spinach and kale, homemade parmesean peppercorn bread and blackberries. I try to make homemade soup every weekend, share it with family or friends and eat it for 2 or 3 lunches during the week.
  • Starkist Chunk Light Tuna in Water Pouch $1.72
(Love these cause you don't need a can opener or don't have to drain the water either)

    Lemon $. 50
(I use 1/2 today & the other half for lunch tomorrow)

    Baby Cut Carrots $2.00
(Large Bag that I use for the whole week. Spread them out over 10 meals)

    Strawberries $2.50
(1 container that I use for 3 days. Spread them out over 6 meals)

Kinda boring and plain. But tastes really good, especially the dry tuna with lemon juice!!!! :flowerforyou:

Tilapia filet baked at 350 for 20 minutes with a lemon wedge, 1/2 tbsp butter, salt, pepper.

1/2 Sara Lee healthy multi gran sandwich thin toasted (would have been a whole one, but half fell onto the bottom of the oven which is not exactly clean lol

1/2 cup 1% fat cottage cheese

Coming in at: 254 calories, 15 g carbs, 10 grams of fat, and a whopping 38 grams of protein.

I snuck in 2 pieces of christmas chocolate at the end which took it up to 327 for my lunch :)

If you look at how many meals you can make from this it ends up being pretty cheap:

Quinoa cooked in low sodium chicken broth (instead of water)
chicken (i bought a rotisseri chicken for this)
    balsamic vinagrette
    green seedless grapes
the receipe called for almonds, but I did grape tomatoes instead

this recipe you can eat warm or chilled and it tastes great both ways!
