Enough good calories!?

Hi there, I'm on week two of p90x and am supposed to have around 2000 calories per day. Obviously, I could easily eat 2000 calories of crap, and I have eaten a chip here and there (and a truffle today) but mostly I'm sticking to the diet plan just as outlined in the nutrition guide. The problem is, I am struggling to get all my calories. I have read posts like this before and people always make snotty comments, but I seriously am trying to get more food into my day. (Or at least more calories without going crazy with carbs or fats.)
Does anyone have suggestions? What have you done to ensure you get your calories?
(By the way, I'm a teacher and can't eat during the day whenever I want... I eat lunch at 11, and then eat a small discreet snack at recess at 12:45. Then I can't eat again until 3, which is not a problem as far as hunger is concerned.)

You might want to start by opening up your diary so the forum can make helpful suggestions.
Without looking at your diary, i would suggest greek yogurt and fruit as a snack... and maybe roasted sweet potato... and maybe some protein smoothies.

If you can make your protein and fat minimums, frankly go for anything you please.

Have a snack of chocolate covered almonds at 3 when the kiddos go out the door yummy good calories.0

A good way to get calories into your diet is to eat bananas. They're pretty high calorie, one large one being 105 cals approximately.. Sneak in 2 with some peanut buter and nuts, and you'll be adding 300+ calories already! Plus, nuts have good fats in them. Eat lean meat like chicken or fish. Bake some and shred them into pita bread, a chicken breat I think is around 100 calories? though its low fat and has few carbs.. doing a diary here would really help you, it can show u the exact calories and fats each food you take has.
