A great substitute for eggs in recipes is tofu blended with a bit of soymilk. It is low calories and high protein and great for vegan baking and cooking. Toful is also a great low calorie substitute for cheese in baked pasta dishes such as mac and cheese and baked ziti. Blend or "mash" silken tofu with Tofutti cream cheese and add some Daiya or Follow Your Heart cheese (substitute) in baked ziti. Make delicious and healthy mac and cheese by preparing the "cheese sauce" by mixing/blending winter squash with soy milk and Tofutti cream cheese ; then add Daiya or Follow Heart cheddar cheese. Mix this sauce with whole grain or regular pasta. Grilled tofu with some Tofutti cheese slices make a GREAT "egg" sandwich. rebecca
